Stuffed Green Peppers -- Healthy, Easy and Delicious! : ) #StuffedPeppers #GreenPeppers #HealthyMeals

Yum!! I just took the Stuffed Peppers out the oven, the house smells heavenly!  A nice little salad all around the stuffed pepper -- delicious and very healthy meal : )  Enjoy!!

Stuffed Peppers are a tasty treat that are like a little meal all by themselves -- you've got the Peppers, other Veggies, Rice and Meat all wrapped up into one neat little package!

Ingredients:

6 - 8 Green Peppers
(you can use Red, Yellow or Orange Peppers, too, for fun!)
1 Pound of Ground Meat
1 Large Tin of Diced Tomatoes
1 Package of Sliced Mushrooms
1 Cup of Frozen Corn
1 Celery Stalk, Diced (about 8 pieces of Celery)
1 Onion, Diced
2 Cups of Rice (uncooked , but you'll be cooking it...!)
Spices -- Montreal Steak Spice, Garlic and Red Pepper Spice, Basil, Italiano Spice... really, whatever Spices you really like in your Spaghetti Sauce will work here.
Cheddar Cheese, Cubed




Step 1: Clean and cut the Top off 7 or 8 Green Peppers.

I make 10 at a time, then I just pop the extra ones individually wrapped in Tin Foil into the Freezer for another day. You can only do that if you use Fresh Meat (not Frozen) when you first make the Peppers...

Step 2: Brown 1 Pound of Ground Beef or Ground Turkey.

Step 3: Add in the Tomatoes, Veggies and Spices. Stir well.

Step 4: Turn the Heat down to Simmer, Cover and leave it for a good 30 minutes.

Step 5: Put the Rice on -- 2 Cups of Rice plus 41/4 Cups of Water outta do it...

Step 6: Cube the Cheddar Cheese, then put a few little cubes of Cheese in the base of each Pepper. Go ahead and put the Peppers straight in the Pan you're going to cook them in -- it's just easier that way. You can Grease the Pan with Olive Oil to prevent the Peppers from sticking to the Pan.

Step 7: Mix all the Rice with the Meat Sauce. Spoon the Mixture into each Pepper, then push some Cheese Cubes into each Pepper. Place the Tops of the Peppers on Top of each one.

Step 8: Pop them in the Oven for about 45 Minutes -- just enough time to go and have a Cup of Tea (or a wee drink!) and relax a wee bit before dinner.

This is a great meal to make if you've had Spaghetti the night before, and have quite a bit of Spaghetti Sauce left over. Just add a few more Veggies and you're off and running.

The other thing you can do is Cut the Peppers in Half so you can Fill each side, then Fill them, cover with Grated Cheese, then Bake them.

These Peppers are great for a Dinner Party, too, and are really nice Served with French Bread and a Nice Salad.
