What can you do with leftover cake?? Here's what to do - make a NEW cake!
You know me, I hate to throw anything away, I'm not a waster kind o' girl... I love to find a new life for something old - like the crazy cake I bought, thought was a'gonna be deelicious, and no, it totally wasn't, jus' a plain ol' cake, soo, I didn't eat it, but I also didn't want to just toss it out, you know? Sooo, here's what I did...
See how much of the cake I had left? Holy schmokes, it really was soo plain Jane, you know - I really, really wanted that cake, too, it looked really good in the store, and I thought it was a coffee cake with cream cheese icing, turns out to just be a pound cake with a lemon Greek Yogurt icing...ick. Yuck. Too plain for me - lol!
So here's how I 'saved' this cake - by throwing a bunch o' stuffs in it, make it delicious!
So I just cut the cake up into squares-ish...nothing fancy, just cut up whatever cake you have left over, including the icing, and toss it in an 8" X 8" buttered pan. I used a 9" X 13" pan, just because I had a ludicrous amount of extra leftover cake... and this is a great recipe for your leftover cake...
Then, I found a jar of unopened Maraschino Cherries in the cupboard, so I thought, well, I'll just throw that in, too...
So far, so good, right? I just poured the entire jar of Maraschino Cherries in, including the liquid.
So then you need something to hold the whole thing, together, sooo, I used :
4 eggs
Splash of Milk - maybe a 1/2 a cup? You can adjust that, depending on how many eggs you use, and how much leftover cake you have! lol!)
Splash of Vanilla
Then I poured in some sugar, maybe a 1/2 a cup
And some Brown Sugar, about a half a cup
And a bunch of Cinnamon... maybe 2 tablespoons...
Mix that really well, and pour over the cake pieces.
Pop in the oven at 350 degrees F for about 20 - 30 minutes, then take it out and sprinkle on the Brown Sugar Topping. You can make more or less, depending on the size of pan...
Brown Sugar Topping:
3/4 cup brown sugar
1/2 cup flour
1/4 cup melted butter (or margarine)
Using a fork or a pastry cutter, mix it roughly to create 'crumbs'.
You can totally skip this stage, I just really like this topping : )
Use your fingers to sprinkle on the topping - will be much easier than pouring it straight from the bowl... a good little trick is to sprinkle from the outside, in, so you have a nice even topping.. or do whatever you like! lol!
Looks yummy, already, right? I love the Maraschino Cherries - who knew? Looks super fancy! lol!
And there it is, all done! And no cake wasted! Yahoo! Think I'll go have one more piece! I like it with a little (okay,you got me, a lot!) of whipcream - yum! Or would be very nice with a nice scoop of ice cream : )
Oh, was just thinking - if you have any fresh fruit, or canned fruit, or maybe canned pie filing, you could totally try that, too...would be delicious, and be sure to use the liquid, too. I wonder if I could have added a cup of some nice juice, too? Hmmm... that's the fun part of a 'Throw-it-Together' cake - just throw in whatever you have in the house! lol! : >
