Coconut Macaroons #EasyRecipes Yippee!

Here we go! Today I made the Coconut Macaroons with Chocolate Chips, but instead of making individual cookies, which we love, I thought it would save some time to just pour all the 'batter' right onto the Parchment Paper, bake it all at the same time, like Squares - Ah'Yum! They're amazing, and so crazy easy to make : )

I used 2 egg whites, 2 caps of Vanilla, I poured in a whole bag of Coconut, plus a little bit more of the larger flaked coconut, from another bag I used, the laast time I made the Coconut Macaroons, when I had used the Condensed Milk - I forgot all about adding in the sugar, and it seems like, with the Chocolate Chips, the extra sugar isn't even necessary - they're so delicious, all on their ownio! So cute, and so delicious!

And then I never like to waste anything, so I made cheesey scrambled eggs with the leftover egg yolks - deeelish!


Oh My Goodness, these are soo cute! And delicious! 

Ghostie Coconut Macaroons

There are 2 super easy ways to make these delicious and delightful little Coconut Macaroons - so cute, perfect every time! Yippee! 

Will take you only a few minutes to make them, plus baking time - and, use Parchment Paper, is ah'mazing, nothing sticks to it - is like magic! : )

Coconut Macaroons

Recipe 1: 

1 egg white, whipped with a fork (What did it do to you? lol!) (Save the yolk for later, make some Scrambled Eggs - Yum!)

2 Cups of Coconut

1 tsp Vanilla (I use the cap for the measurement - is easier and faster : )

A little less than a tbsp of Sugar - that one is optional...

Okay, that's everything for the first recipe... 

And now for the variation... if you happen to have a can of Condensed Milk in the house...



Recipe 2:

1 egg white, whipped with a fork 

5 Cups of Coconut

1 tsp Vanilla 

1 can of Condensed Milk (no need for any extra sugar, this will be sweet, enough : )

THEN, Chocolate Chips to make the little faces - 3 chocolate chips per cookie - soo cute! 



Are you shocked at how few ingredients? I know, right? And Macaroons are soo expensive, in the stores - and now you know how to make them, too, and they're super-crazy easy to make - yahoo! 

Hello, more Trick or Treats! 

These are particularly great for holidays, but are fun, any time of year, and the kids love them, too! 

Directions: 

The easiest way to separate the White of the Egg from the Yolk is to crack open the egg against the side of the bowl, pour out the whites of the egg, pop the egg yolk into the other side, the shell will do all the work for you : ) 

Then save that egg yolk for when you're done baking, then add a little milk or water, whisk with a fork, pop in the microwave for 1:20 (or, a little over a minute, depending on your microwave, and how cooked you like your eggs!), covered, then use 2 knives to cut it quickly into Scrambled Eggs - is so good! Ah'Yum! 


So, Whisk 1 Egg White with a fork

Add in the Vanilla and Sugar, for the super easy Recipe 1

For Recipe 2, this is the time to add in your can of Condensed Milk


Remember, the Condensed Milk is just an option, and it uses waaay more coconut, so, see how much coconut you have on hand, first, and how sweet you want your Coconut Macaroons - I love them both ways, but, I think I like the first recipe the best - uses fewer ingredients, is a little healthier for you, too - but, you do you, boo! Try them both, see what you and your family like the best, or, go back and forth, depending on what you have in the cupboard - lol!


Now that you've made your Egg White nice and Frothy (the Snowman? haha!), add in less than a tablespoon of sugar, and only for Recipe 1, the one without the Condensed Milk : )


Mix that all together, now - like a choir of deliciousness! Haha!


OR, for Recipe 1...

Now Add your Coconut: (Put the lime in the coconut, and mix it all up... nooo, just the song, don't add any lime - lol!)

Recipe 1 - looks pretty different from Recipe 2, at this stage, but will taste virtually the same - for real! 



You oven should be on at 350 - I like 350, you can go lower, if you like, 325... 350 is just easy...

Make little forkfuls, or spoonfuls, however you like to do it, and put them on the Parchment Paper

See, they look slightly different, but, they will all taste great, no worries : )
Take one tray out as another tray goes in : )
Make little faces one one tray, at least - these ones go first - mostly because they're sooo cute! 

Just 3 little Chocolate Chips - so cute! And they look so pretty, in the fridge - lol!





The main difference between Recipe 1 and Recipe 2 is how many it makes - just double Recipe 1 if you want lots of Coconut Macaroons - Easy Schmeasy! 


Bake until they're Golden Brown - just keep an eye on them - about 15 minutes, I think - I lost track of the time - lol!

Apple Cake - Or, Really, More Like Apple Brownies, the second day (there might not be a third day, they're so good - haha!) #Fruit #Brownies #apples #cake #brownies

Apple Cake - or, Apple Brownies - Ah'Yum! 

These are amazing - they have the texture of a Brownie, but you can take the base, add 2 cups of any fruit you like, will be delicious! AND, I'm gonna make them with chocolate chips, the next time, and some chopped walnuts, maybe toss in some Cocoa Powder (now we have to be all fancy and call it cacao - whatevs, is Cocoa Powder to me - haha!), make ACTUAL Brownies - lol! Ah'Yum!

So this was an accidental recipe, that came outta mah' head... I had soo many extra apples, and we were all Apple Crumble'd out, so-to-speak - we had just finished our last batch of Apple Crumble, which we loove, is fantastic, but you know when you just want something a little different? 

Well, that was us, last night, and my son was out at work, so I was all on my own to cook - is waaay more fun to cook, together, since Aidan chops up the apples for me, and gets everything out, puts everything away - I highly recommend having good children - well worth it - haha! 

Anyway, so I had all these apples, since they were finally a good price at the store, the last time we were out shopping... and, little aside, here - there is no good reason the gov't can ensure that all produce, all fruits and veggies, meat and dairy, should all be VERY affordable - that's well within their realm of ability, and they choose not to make all the basic healthy food unaffordable, for far too many people, so, let's work toward affordable fresh food, in the future, shall we? And if we can put the pressure on stores to offer food that someone has decided, for no good reason, it cannot be sold, that needs to be made available for people to choose for themselves, at a heavily discounted rate, if they would like to buy it - you can always cook with older produce, and we can all be healthier and happier, with more money in our pockets - wouldn't that be a nice thing for the governments to do for all of us? 

Apple Cake, or, Apple Brownies - so good when they're cold!

Apples - Whatever Apples you have left : )

1 Can Evaporated Milk, or 1 cup any type of milk

1 Cup Brown Sugar

OR

Just chop up the apples and cook them in a pan, or, just put them straight in the batter - play around with it, see if it changes the flavor or texture - this is a Use-It-Up Recipe : )

However you want to prepare the apples, that's your choice, baby!

If you want to use any other kind of fruit, like this delicious Blueberry/Raspberry/Blackberry Frozen Fruit mix - just use 2 cups of fruit, and skip the cinnamon : ) 

For the Cake Mix Batter:(You can add 2 cups of any fruit to this)

In a small microwave safe bowl, mix...

1/2 cup, or 1 brick, Margarine (pop in the microwave, melt it, let it cool)

1 Capful of Vanilla

1 Egg

(Beat together with a fork - no need for anything fancy : )

In the pan, 9" X 13", mix with your fingers:

1 tsp Baking Soda

1/4 tsp Salt

1 Cup Sugar

1 Cup Flour

1 Tablespoon Cinnamon (I just pour it in, so, about that amount - lol!)

The batter will pull away from the edge, is a little funny, so I just poured all the apples in the pan right onto the batter, and mixed them all together (altogether, now! lol!) : )

#BakingTip: Sprinkle the whole thing with a little bit of sugar, that will give any Fruit Bread a nice crisp topping : )

Bake at 350 for about 40 - 50 minutes - you can just turn the oven off, let it sit in there, if you like, then pop it in the fridge - will last for days, if it isn't eaten right up on the first day - haha!
 These are the Fruit Brownies on their way into the oven, and then cut, after being in the fridge to cool for a wee bit : ) Deeeelicious! You'll love them, your family will love them, and your friends will all love them! Yay! Great Success!


I used a little light caramel sauce for ice cream, last night, after it came out the oven and was still warm, but, I think we both loved it even more, cold, and just cut into squares - so good! 

For company, you could serve it warm with ice cream and a little caramel sauce, or a wee bit of whipped cream - yum! It's very nice, and healthy, too! And now you didn't waste your apples! Yahoo! Good for you!! And me!! lol!

Even better, after a night in the fridge, Apple Cake has now become Apple Brownies, and they are soo delicious! Ah'Yum! 

So good, you can just stand in the kitchen with a fork and the pan - will be okay! lol! 


Yum! You could serve the Apple Cake with Ice Cream or Whipped Cream - deeelish!


This is optional, and I was playing around with marrying the two recipes together, to come up with this new-to-us Apple Cake... This is part of the base I use when I'm making my Scottish Tablet, or Southern Pralines, my own version...

And what I normally do with my apples in my fave Apple Crumble Recipe...

So I poured 1 cup of Brown Sugar in the large pan, skillet, whatever you like to call your pans - lol! Then I poured in a can of Evaporated Milk, stirred that around, let it boil, turned it back down to 7, then started chopping the apples, tossed them in as I went along, just l keep stirring the apples in, then they'll cook nicely, be covered in toffee - but not a toffee that's hard on your teeth - no worries!

Don't worry about this part, if you don't feel like doing it - you can cook the apples down in water or juice, if you like, or not at all - it's entirely up to you, just play around with the recipe, see what works for your timeline, and what you happen to have in the house : )

It's extra fun when you have a good idea, and then it totally works out - yippee!! ; )


So I just mixed the batter right in the 9 X 13 pan - was just easier that way, and was so surprised that the batter came away from the sides like that, so I just mixed all of the apples right into the batter, crossed my fingers, and hoped for the best - lol! And it all worked out - is soo delicious!


1 can of Evaporated Milk in with 1 cup of Brown Sugar... add another cup of white sugar, and you're on your way to some lovely caramels! lol!  


Those are the 'leftover' apples that started the whole thing - Waste Not Want Not, right? 

I never want to waste anything - and is fun to make something out of, sorta, nothing - or whatever you happen to already have in your kitchen : ) Yum!


It's always waaay easier to just melt your margarine in the microwave, first, 60 seconds for 1 brick, let it cool, add in your vanilla and however many eggs your recipe calls for - no need to struggle with 'cream the butter', any more - that's old world thinking, and unnecessary for good baking - no worries! You'll bake more if it isn't such a giant hassle, and if it doesn't take up too much of your time, right? Uh'Yep! ; )

And I use my fingers to mix the dry ingredients... if you think you'll make this more than once, go ahead and make an extra batch, or two, while you have everything out on the counter, then the next time you bake it, it'll be soo fastie schast, you'll love it! I just label those baggies in the fridge, makes life so much easier : )


See? Is soo great to just yoink, right out the fridge, add the liquid ingredients and the oatmeal, and chocolate chips to the second half of the batter, when we make our fave Oatmeal Chocolate Chip and Oatmeal Cookies - they are ah'mazing! And super healthy, so, no guilt - yahoo!




Oh, man, these are so good - like Apple Brownies - what an amazing texture! Yum!


Add a little sprinkle of sugar with your fingertips - just give it a good cover with the sugar - not too little, not too much - juuust right - will create a natural crust for your Fruit Bread - or any cake - is a nice little baking trick!


Just mix it all together in the pan, sprinkle with a little sugar, pop in the oven for baby and me - at 350 Degrees, for about 45 minutes, depending on where you live and your oven : )


Ah'Yum! And I put those roses around my dress, too - lol! It attaches on either side of the top of my dress straps : )



And I do the same with this little row of flowers - and that's one of my many, many lovely wee trees that I love to make - I a' Artist! ; )


The apples in the pan - I just kept adding them in - don't worry about how many apples you have - I was just using up all the rest of the apples before they went bad - nothing worse than a Bad Apple - hahaha!


My fave Apple Crumble Recipe - and you can lose a lot of weight with this one, too - yahoo!


You could do this with your apples - and, note that I never peel any of my apples or potatoes - why lose out on the nutrients and fiber? That's craaazy - and, fibre, for all my Canadian friends - lol! 


Yum! Apple Crumble!! Delicious hot or cold - so good good - I lost 35 pounds with this!



I always cook with Parchment Paper - love it, will change your life, if you haven't tried it, yet - and I take any treat I've made, and slide it right off the pan, on the parchment paper, and cut it into little squares - just the right size! Makes hundreds of lovely wee treats! Yay!!

Scottish Tablet or Southern Pralines, and if you don't cook it as long, Caramels - and you can even dip your apples in it for Caramel Apples!  #Recipe
