Cranberry Pineapple Walnut Bread -- Ooooh, soo good! #Cranberries #Pineapple #Leftovers! #lol!

Cranberry Pineapple Walnut Bread - Yum! 
Yum!! Soo 'alicious! Simple and easy to make, open a couple of cans, chop a few nuts (so-to-speak! lol!), add a few dry ingredients, and whammo, you've got delicious Cranberry Pineapple Walnut Bread... is so healthy, and if you happen to have leftover cranberries and pineapple from any holiday, now you won't waste it, you'll have something lovely to make with your leftover ingredients : )


Yum, fresh out the oven... smells sooo good!  And you know it's all jam-packed full of fruit, so it's a lovely, healthy, tasty treat!  I love it when it's really cold, straight out the fridge (cut and put in fridge as soon as the pan is cool enough... : )

These went straight over to my favourite mechanics... T'nT Mechanics at 145 College St. East in Belleville, Ontario, Canad a (613-969-6306)... Ted Taylor, the owner, used to be one of my wonderful Dad's students at Quinte High School, and Ted had such lovely words to say about my Dad, well, it just touched my heart, AND they fixed the air conditioning on my car, for which I am eternally grateful (!), so now I bring them wee treats, since I only know how to make massive amount of anything, and God Knows, I'll just eat it myself if I don't share it! hahaha! 

This is the amount I'm supposed to eat, just one little lonely piece, all by itself... but it's not possible!  Nope.  Too delicious.  I'll just put some extra time in at the gym! lol! 


You can use your leftover cranberries in Cranberry Bread... just like the Banana Bread, only you use Cranberries, instead. I generally use the whole can of Cranberries, especially if I've found them on sale, somewhere... this is really lovely bread, and you can make it like a coffee cake in a square 8" X 8" pan, or in a 9" X 13" pan (will take very little time to cook in a larger pan), or you can make it in a loaf pan... this makes a lot, especially if you are a little bit like me, and add anything you have in the house that might be delicious... that's how the pineapple and the extra chocolate got in this new batch! lol!



Go ahead and throw in the pineapple, if you have it, and some nuts, if you like them.... chocolate chips are great, too, since chocolate cranberry is a great combo, right? (Also, Cranberry/Vodka! lol!)

Everything you need for delicious Fruit Bread :)

Cranberry Pineapple Walnut Bread (and Chocolate ... lol!)

Stir together in a large bowl:

1 13/4 cups of Flour

1 cup Sugar

1 tsp. Baking Soda

2 tbsp. Cinnamon

Now in a smaller bowl, add the 'wet ingredients':

1 can Cranberries

1 can Pineapple bits (or any kind of pineapple you have!), drained (add a little vodka to the pineapple juice -- yum!  Now you're REALLY having fun in da kitchen! lol!)

Chopped Walnuts, 1 cup, chopped, if you have them on hand...

1 Egg

1 tsp. Vanilla

1/3 cup melted margarine (melt 30 seconds in the microwave)

If you have some nuts and raisins, toss them in, too... will be delicious! :)


Oh, don't forget to sprinkle the Cranberry Bread with LOTS of sugar (well, not a craaazy amount of sugar, but a good liberal sprinkling of sugar will give any Fruit Bread a nice crispy crust... you'll love it!), to give it a really nice finish.. will be waaay more delicious, and if you are going for more of a 'Coffee Cake', add the Crumb Topping, and that will be absolutely lovely, too : )


Bake at 350 Degrees F. for 15 - 45 minutes, depending on pan size you use, your oven and your altitude (remember to grease the pan, and/or use parchment paper so it won't burn or stick to the pan... : )

Yum!  You're gonna love this Cranberry Pineapple Walnut Bread!  You can skip the pineapple -- really, just use this base for any fruit bread (go back down to 1 1/2 cups of flour if you skip the pineapple... less liquid, so you don't need as much flour....), so if you see some canned fruit on sale, go for it, give it a try, see how you like it.  It's fun to play around in the kitchen, see what delicious things you can come up with!
